This gluten free pancake is perfect for breakfast, lunch, dessert and even a post work out snack. Serve up with coconut yoghurt, fresh fruit and lemon juice.

Preheat oven to 180c.⠀
Place the apples in a frying pan/ skillet, sprinkle walnuts, 1/2 tsp cinnamon, coconut sugar & lemon evenly on top. Put in the oven for 5 minutes, whilst you make the batter.⠀
In one bowl, combine flour, baking powder, 1/4 tsp salt, 1/2 tsp cinnamon.
In another bowl, stir the wet ingredients together.
Pour the wet bowl in slowly to the dry bowl and whisk until the batter is even.⠀
Evenly pour your batter on top of the apples and bake for 25 minutes until cooked brown. ⠀

Cut & serve in slices with tasty toppings! How about fresh berries, walnuts, peanut butter, hemp seeds or all of them?
