This kale potato walnut salad is dairy free, gluten free, refined sugar free and soy free, you can’t go wrong. Tasty plant-based creamy dressings can be hard to come by. This one is real easy to make and lasts in the fridge for weeks.
For this recipe you will want a good brand of vegan mayonnaise, Rubies in the Rubble is a great brand! You can either make this from scratch (there are many recipes online using aquafaba etc) or you can do the slightly easier option which I took by buying some pre-made from health food stores. If you do purchase a product ensure the ingredients on the back don’t contain any nasties, like long words you don’t even know how to pronounce!
This dressing stirred into cooked potatoes, lightly fried kale and covered with walnuts and pumpkin seeds, gives you a really satiating dish.
I’ve added garlic, olive oil, apple cider vinegar, maple syrup, nutritional yeast, mustard, garden herbs, chives, onion powder, sea salt and cayenne pepper. I’ve really gone all out on the flavour balancing so don’t feel the need to add all of it. This is just the best I’ve got it tasting so wanted to share this with you!
There’s certainly nothing boring about this salad! Warm grounding potatoes with protein rich kale, brain boosting walnuts and magnesium rich pumpkin seeds, this salad will support your mind, body and soul on many levels.

First, boil the potatoes for approximately 20 minutes.⠀
Whilst the potatoes are boiling make the dressing and kale. Place all the dressing ingredients in a blender and process until smooth.⠀
Next in a saucepan lightly fry the kale in olive oil for 5 minutes.⠀
Once the potatoes are soft, strain them and let them steam off for 5 minutes. ⠀
Turn the hob off and mix the potatoes in the saucepan with the kale, generously pour the dressing over it all. Add walnuts and pumpkin seeds or mix of your choice. ⠀
