Kombucha tea mint jelly anyone? Your tummy will be thanking you for these cool and minty fresh mini jellies filled with kombucha tea probiotics and garden spearmint leaves.

Probiotics in jelly form?? Alright then!
Well this is different, I’ve never eaten this before let alone made it, however they actually turn out pretty good! ⠀
I’ve used agar flakes in this recipe, which are a high quality vegetarian alternative to gelatine, for making desserts and jellies. It works just as well! Also known as “kanten” in Japanese, these flakes are traditionally made from sea plants in Japan. How cool is that!?
They are neutral in flavour and provide a clear result making them a great ingredient, as it doesn’t alter the taste or colours that you’re aiming for. Even better, they are free from any bleaching chemical or softening agents making them totally safe to use!
GET THAT MAGIC TEA!
Not forgetting our main ingredient here…kombucha. This increasingly popular fermented green tea beverage populates the gut with healthy bacteria and supports your immune system. I’ve used home brewed kombucha however these days they are quite easy to come by! Health stores, some supermarkets like Sainsburys and even Boots stock them now.
Next time you’re in a store take a quick look down the fridge aisle and buy a bottle to taste, especially if you are yet to try one. Even if you’re not going to use for this recipe, it can be enjoyed as a refreshing bubbly drink.
I bet you’ve never tried it in jelly form though! Give it a go, get creative…

Pour the kombucha into pan (without the heat on) and add the agar flakes.⠀
Bring the liquid to a boil slowly, then simmer for 5-10 minutes until the flakes have dissolved.⠀
Add your mint leaves into each section of the ice cube tray. Then pour in the liquid and leave to sit in the fridge to thicken overnight. Enjoy the next day!
You can also freeze these to make mini kombucha ice cubes!
