Energising oat, apple, peanut vegan cookies with juicy raisins all bound with nutty flaxseeds, make these great after workouts or mid day snacks. Gluten free, refined sugar free and dairy free makes these an allergen free and taasty cookie!

These nutrient dense cookies are great about 2 hours before you exercise or right after you’ve finished. They fill you with energy ready for your workouts and also help with the recovery process afterwards. Just make sure you have these at least 2 hours before exercise so they have been mostly digested. Eating too soon before exercising can result in stomach pains, lack of energy or that well known stitch, which nobody wants!
Think about it, if you were running you’d want your body focusing on getting yourself up that hill, going the extra distance or giving yourself that boost when you need it. Not concentrating on digesting the food in your tummy! Keep yourself light and energised peeps!
They also help with balancing your blood sugar levels so take one to work with you for a 3-4pm snack.

Preheat the oven to 170c and oil/line a tray.⠀
Mix all dry ingredients together until well combined.
Blend the apples with a little water until you get a puree. Mix in with all the wet ingredients.
Mix the wet in with the dry ingredients slowly and evenly.⠀
When the mixture is well combined and sticky, form cookie shapes with a cutter or your hands and place on the tray. Sprinkle the toppings on top! Bake for 15 minutes.⠀
Let them sit on the counter to cool (off the cooking tray) for 20 minutes before tucking in!
