All the root veggies and garden herbs! Potatoes, parsnips, carrots, rosemary, thyme it’s all in this warming root vegetable mushroom stew.

I’d like to give potatoes a bit of attention here!
I feel they are kind of seen as ‘ordinary’ or ‘not good for you, cut out the white foods!’ type of food but there’s so much good to them! You wouldn’t look at the white in an apple or onion and think it had no goodness in it right?
Plus potatoes don’t have to be white, they can come with nutrient rich red, brown, gold blue or purple skins. These skins are something you don’t have to be peeling off too. They are one of the best nutrition sources containing amino acids (building blocks of protein which are easier for the body to assimilate), proteins and phytochemicals. They draw the highest concentration of macro and trace minerals from the earth, are high in potassium and vitamin B6 therefore offering your body the support of fending off liver disease, strengthening your kidneys and soothing your nerves and digestive tract.
I don’t mean to go on but I feel potatoes need full appreciation, haha! On top of the above, they are so antiviral, antifungal, antibacterical and a brain food to help you keep you grounded and centered. So get these potatoes stewing nicely in this root vegetable mushroom stew.
