Boil your chopped sweet potato for 15 minutes until soft. Then strain and let sit for 10 minutes to cool.
Add all the ingredients together in a large bowl and mix until well combined. Let it sit altogether for 5 minutes to allow the flavours to mix. Add more olive oil if you'd like and enjoy!
Store in an air tight container in the fridge for up to 2-3 days.
